Every Mac setting is three clicks away and the one you want is always the third. JumpDock puts them in your menu bar: privacy sections, settings panes, utilities, your own apps and folders. Including the Gatekeeper setting macOS gives no direct link to. And for audio, every output and microphone gets its own volume slider and mute, acting on that device whether or not it's the current one. Scroll over a device's menu bar icon to change its level.
